You could probably leave one or two out if you can't find it. However, finding vine leaves or lamb (here in the states, at least) might be tricky. I could substitute the vine leaves with cabbage or some other bigger leafy green I'm sure but Idk what I'd substitute the lamb with.....ground turkey maybe? They're used a lot in Greek cooking so I could probably find those easier at an ethnic store or in the ethnic section of the grocery store.....much easier than vine leaves lol. IDK if it's a nationwide chain or if it's just exclusive to Chicago and its suburbs, but there's a place called Tony's Finer Foods that sells foods from all over the world.
